What changes the cook time
- Spatchcocking (removing the backbone and flattening) cuts time and cooks more evenly.

Which wood for whole chicken?
Apple or cherry. Chicken is lean and mild, so it takes smoke fast and shows off a sweet fruit-wood smoke. Cherry also gives the skin a deep golden-mahogany color. Avoid hickory and mesquite, which can taste medicinal on poultry.

Is pink smoked chicken safe?
Smoke can leave a pink ring even when chicken is fully cooked. Go by temperature — 165°F — not color.
