How long to smoke chicken thighs?

Bone-in, skin-on thighs take about 1 to 1.5 hours at 275–300°F (boneless a bit less). They are safe at 165°F, but most cooks take thighs to 175–185°F, where the connective tissue softens and they eat best.

What changes the cook time

  • Boneless thighs finish faster.
  • Crowding the grate slows the cook.

  2. Check several thighs; pull at 175–185°F.
  3. Glaze in the last 10 minutes if saucing.

Which wood for chicken thighs?

Apple or cherry. Chicken is lean and mild, so it takes smoke fast and shows off a sweet fruit-wood smoke. Cherry also gives the skin a deep golden-mahogany color. Avoid hickory and mesquite, which can taste medicinal on poultry.
