Smoker Temperature for Salmon
Hot-smoke salmon at 175–225°F. Lower temperatures (175–200°F) give a firmer, traditional smoked texture over 1.5–2 hours; 225°F is faster (about 1–1.5 hours) and softer. Cook to 145°F or until it flakes.

Avoiding white albumin
The white protein that beads on salmon is albumin squeezed out by heat. Brining and a lower, gentler pit temperature keep it to a minimum.
